Maybe when you nuke (microwave) them just a little before, it could work great. I even haven't tried that yet, though.
Also, seeing that it can be a disc, everything comes out curved. So if you want to have traditional right julienned veggies, you'll have to reduce them by midpoints of hand or find a totally different computing device.
But if you don't thoughts curved veggies, then no problem. It does an ideal work on zucchini, and I would bet, on eggplant, too.
